Warm Sweet Potato Salad
|2 large sweet potatoes, peeled and diced||1/4 tsp. garlic powder|
|1 - 2 Tbs. Olive Oil||1/8 tsp. pepper|
|1 Tbs. Balsamic Vinegar||2 Tbs. chopped green onions|
|1/2 tsp. dill weed||1 Tbs. real bacon bits|
|1/4 tsp. salt||Walnuts, Craisins, or whatever as desired|
|Heat olive oil in large frying pan. Add diced sweet potatoes and stir. Flip frequently during cooking, being sure not to over-cook (potatoes should have a slight crunch left!). Meanwhile, in a small bowl, combine the oil, vinegar, dill, salt, garlic powder and pepper. Add to sweet potatoes and toss to coat. Sprinkle with onion and bacon. Add additional ingredients as desired. Serve immediately over a bed of lettuce. (You may want to lightly drizzle the lettuce with the dressing before tossing the sweet potatoes.)|
