ezbz fudge


Single Batch—[double batch in brackets]

 1 1/2 sticks (3/4 cup) BUTTER                                   [3 sticks]
2/3 cup (1 small can) evaporated milk                          [1 regular can]
3 cups sugar                                                                [6 cups] 
1 pkg. flavored chips                                                    [2 pkgs.]
1  7 Oz. container marshmallow cream                         [large jar—13+oz]
1 tsp. extract as needed                                                [2 tsp.]

Melt the butter being sure not to scorch.  Add the milk and sugar.  Adjust the heat to medium and cook for five minutes, stirring constantly.  Increase heat to medium high and continue stirring until mixture comes to a rolling boil.  Boil exactly 1 1/2 minutes, stirring continuously.  Remove from heat and add chips.  Stir until chips are completely melted.  Add marshmallow cream and stir until totally blended.  Add extract and pour into a buttered 9X12 cake pan.  Allow to cool. 

 Will keep in a cool place for up to 4 weeks.  May be frozen.  See varieties!


   Chocolate—use high quality chips—Nestles-Ghirardelli-Bakers and vanilla extract (chopped walnuts if desired!)
   Vanilla—use white chips and vanilla extract
   Almond—use white chips with almond extract
   Lemon—use white chips with lemon extract and yellow food color
   Orange--white chips, orange flavoring, red and yellow food coloring
   Butter Pecan/Butter Brickle--white chips, butter flavoring, chopped pecans or a package of brittle chips
   Peppermint—use white chips with peppermint extract and red or green coloring (or add a package of Andes peppermint pieces)
   Cinnamon—use cinnamon chips and no extract
   Peanut Butter—use peanut butter chips and no extract
   Salted Nut Roll--add a large jar of dry roasted peanuts to Peanut Butter fudge
   Cherry—use cherry chips and no extract
   Cappuccino—use white chips—when adding the milk, add 2 heaping Tablespoons instant coffee and 2 Tablespoons instant cappuccino flavoring.  Top with a layer of chocolate fudge

     Maple Nut--white chips, maple flavoring, chopped walnuts
